A Fall favorite.
1 cup of vegetable oil plus additional for the pan
3 cups all-purpose flour
Baking powder, 1 teaspoon
Baking soda, 3/4 teaspoon
1/4 teaspoon salt
Use 2 teaspoons of apple pie spice mix
1 cup honey divided
3/4 cup of granulated Sugar
3 large eggs
1 teaspoon pure vanilla extract
Peel and shred 2-3 apples (about one quarter pound),
1/4 cup warm (or boiled) water
Preheat the oven to 350˚ F. Brush a 12-cup nonstick bundt pan with vegetable oil.
The flour, the baking powder and baking soda in addition to the spices should be whisked together separately.
Mix 3/4 cup honey in a large bowl with the sugar, vanilla bean, vegetable oil, eggs, and granulated suga. Use a hand mixer to beat on medium high speed for about 4 minutes.
Mix the apples and flour together until well combined.
Pour the batter in the bundt pan. Bake until golden, and a wooden toothpick inserted in the center comes clean. This should take 50 to 55 minutes.
In a small bowl, combine the remaining 1/4 cup of honey with the warm water.
The cake should be removed from the oven. Brush the top of it with half the honey mixture.
Allow the cake to cool in the pan for 20 minutes, and then transfer it onto a rack covered with waxed-paper.
Brush the cake with the remaining honey mixture.
