Frittata with Bacon, Mushrooms and Cheese
6 large eggs
1/4 cup of cream
Four slices of bacon, chopped
1 chopped garlic clove
1/4 cup white onions, diced
4 oz can of sliced mushrooms, drained
Oregano dried, 1/2 teaspoon
1 teaspoon dried thyme
Four slices of Swiss cheese, each cut into 1 inch pieces
Chop fresh chives into 1 tablespoon
Broiler to low. In a large bowl, whisk together the eggs and cream. Set aside.
Heat a medium nonstick saute pan over medium-high heat. Add the bacon, and cook it until crisp.
Add the chopped onion and minced garlic, and cook 2 minutes.
Add the mushrooms, oregano and thyme and saute another 2 minutes. Add the egg mixture, and cook it for 4 to 5 mins until the bottom is set. Spread the cheese evenly on top of the frittata.
Broil the frittata until it is golden and fluffy. Remove the frittata from the pan and sprinkle chives all over.
