Broccoli Rabe Pasta

Broccoli Rabe Pasta

3 cloves garlic, minced
1/4 teaspoon red crushed pepper
1 large bunch of broccoli, weighing about 1 1/2 pounds, with the ends trimmed
Use 2 tablespoons of salt plus 1/4 teaspoon sea or kosher.
3/4 lb ziti pasta
Extra virgin olive oil 2 tablespoons
1 cup of chopped onion
2 cups low-sodium chicken broth
Black pepper freshly ground, to taste
1 cup Parmesan, grated


The leaves and tender stems of broccoli rabe can be chopped coarsely.

Bring 34 of a large pan to a boil. Add 2 tablespoons of salt to the pasta, and cook until it is al dente.

In a large skillet, heat the olive oils over medium high heat.

Add the onion, garlic and crushed red pepper and sauté until soft, about 4 minutes.

Mix in half of broccoli rabe including the florets. Coat them with oil.

Cook until wilted. This should take 2 to 3 mins. Stir in the rest of the broccoli rabe, and cook for about 5 minutes, occasionally stirring.

Pour in the broth, reduce the heat to medium-low and simmer for another 8 to 10 minutes until the broccoli is tender.

Sprinkle with pepper and 1/4 teaspoon of salt.

Once the pasta is done, drain it and put the pasta into a serving dish.
