Seriously, we’ve been completely obsessed with this recipe over the past few months and can’t get enough of this gorgeous mix of flavors. The cauliflower steaks, seasoned with a mixture of cumin, smoked paprika and black pepper are briefly pan-seared, and then baked until tender. While they are baking, prepare a zesty pine nut and lemon gremolata using fresh mint, parsley and garlic. The hot cauliflower is then topped with hummus, either homemade or purchased. It’s also sprinkled with gremolata and drizzled with olive oil. And just like that…an absolutely delicious Vegetarian dinner is yours.
This recipe actually happens to be both vegan and gluten-free too, and can easily be prepped ahead of time if you’d like to make a larger batch for entertaining or a small batch for a normal weeknight. Ours is usually served with a side salad, and some good crusty bread for mopping up the extra hummus. It always, always hits a spot.
