Ingredients

Chocolate Chip Cookie

  • 8 tbsp Vegan butter melted Unsalted
  • 1 Brown sugar Pack
  • 3 tbsp Aquafaba Can of chickpeas liquid
  • 1 tbsp vanilla bean paste
  • 1 1/2 Gluten-free flour
  • 1/4 Tsp Baking powder
  • 1/4 Tsp baking soda
  • 1/2 Tsp Salt Kosher
  • 1/2 Dark chocolate

Mochi Filling

  • 1/2 glutinous rice flour
  • 2 tbsp Cornstarch
  • 1 tbsp Organic cane sugar
  • 1/2 Plant milk Unsweetened
  • 1 tbsp Vegan Butter Temperature of the room

Instructions

Chocolate Chip Cookie dough

  • Mix vegan butter with brown sugar in a bowl until smooth. Aquafaba should be whisked vigorously until it is frothy. Add the vanilla to the bowl and continue whisking.
  • Then, using a spatula, gently fold the dry ingredients into the liquid mixture, until it is smooth. Fold in dark-chocolate chunks and place this mixture in the fridge while you prepare mochi filling.

Prepare Mochi filling
