How to Cook Summer Vegetables

Classic Italian Peppers And Eggs


Slice into rings of 1 inch 12 sweet Italian frying bell peppers (small to medium), stems and seeds removed.
1 small onion, sliced
8 eggs, beaten
3 tablespoons of olive oil
½ teaspoon dried oregano
¼ teaspoon chili flakes
Taste salt and pepper


Add the peppers, onion, and seasonings to the hot oil in a large skillet. Cover the pan with a lid and steam vegetables on medium heat for 10 minutes. Continue to cook another 5 minutes without covering the pan. Add the beaten yolks and continue to cook, stirring constantly, until the yolks are fully set.

Serve with an Italian loaf and a green salad or pile onto a hoagie roll warmed up for a delicious sandwich.

Summer Cherry Tomato Pie

Refrigerate 1 prepared piecrust at room temperature
2 cups grated cheese
Fresh chives, 1/2 cup
½ cup mayonnaise
1 tablespoon Dijon mustard
Cherry tomatoes 2 pints, cut in half
½ teaspoon Kosher salt
¼ teaspoon ground black pepper
¼ cup fresh parsley


Place the chopped tomatoes in a small bowl. Add salt. Toss everything well. Let the tomatoes drain on a kitchen cloth for 30 minutes.
