  • medium pot

  • 2 tbsp Olive oil or neutral oils
  • 1 Yellow onion diced
  • 2 Carrots Peel and diced
  • 2 Ribs Celery diced
  • 5 Cloves The following are some examples of the use of Mince
  • 1 Tsp Kosher salt More to Taste
  • 1 Tsp Fresh thyme
  • 1/2 Tsp smoked paprika
  • 1/2 Tsp Red chili flakes
  • 4 vegetable broth
  • Black pepper
  • 2 15 oz cans White Beans Drain and rinse


  • In a pot, add olive oil and once hot, sauté carrots and onions for 2-3 minutes. Add onion and salt and sauté another 2 minutes or so.
  • Add the garlic, thyme smoked paprika beans and red chili flakes. Sauté for 2 minutes then add vegetable broth and bring the mixture to a boil and then lower to a simmer for 15 minutes, covered.
  • Blend until smooth using an immersion blender or a blender. Add more vegetable broth to the soup if you want it thicker. Blend until desired consistency. As needed, season with black pepper and salt.
