Easy Blueberry Crumb Coffeecake


Softened 6 tablespoons of unsalted butter
½ cup light brown sugar
1 teaspoon vanilla extract
1 large egg
1 1/2 cups of self-rising Flour
Half a cup of buttermilk
1 cup blueberries

½ cup light brown sugar
1 cup self-rising wheat flour
8 tablespoons of unsalted butter, chilled


For the streusel

In a large mixing bowl, combine the flour and sugar.
Use your fingertips to mix the butter, flour and sugar until they form clumps. Set aside.


Preheat oven to 350°F.

Add all cake ingredients in a large mixing dish. Hand-beat the ingredients to a smooth consistency.

Butter an 8-inch pan. Spread the cake batter evenly. The pan.
Sprinkle the berries onto the cake dough.
Sprinkle the streusel on top of the berries. Bake the cake between 50-60 minutes. A toothpick should be clean when the cake is baked. Cool the cake on a wire rack.
