  • 1 shallow pan


  • 9 oz vegan "beef" Use yuba instead (see note)
  • 1 Package enoki mushrooms Around 7 oz
  • neutral oil
  • 1 The following are some examples of the use of onion Yellow, thinly sliced
  • 2/3 vegan dashi or use vegetable broth
  • 2 tbsp tamari or use soy sauce
  • 2 tbsp ??????????????????????????????????????????????????????????????????????????????????????????????

  • 1 Green onion Thinly sliced
  • 1/2 Tsp Black pepper


  • Warm your choice of vegan meat (make sure it’s thin and pliable). The base of the enoki mushroom should be removed, leaving no woody bits. Divide the mushroom bunch in 10-12 sections. Wrap each mushroom section tightly with a piece of vegan beef. Repeat with the remaining meat and mushrooms. Wrap each mushroom in yuba if you are using it.
  • Heat oil in the pan on medium heat until shimmering, then add onion slices and sauté until tender and fragrant. Add your enoki to the pan and lay them flat.
  • In a small dish, combine dashi. Tamari, mirin and Sake. Pour the mixture into the pan and over the enoki roll.
