Farro Salad and Greek Chicken Kabobs

Greek Chicken Kebabs

2 portions


2 boneless chicken breasts, approximately 6 0z each, sliced into 4 pieces
Tzatziki Sauce, recipe below

½ large lemon juiced, reserve the remaining half for the kabobs
1/2 tablespoon honey
1 tablespoon olive oils
1 teaspoon minced garlic powder 1 clove crushed fresh garlic
½ teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper


Mix all marinade ingredients together in a Ziploc bag.

Marinate the chicken and place it in the fridge for at least 30 min. You can also marinate the chicken for up to a night.

You can cook the kabobs in the same amount of times on a grill, in a broiler or in an air fryer.

Each skewer should have approximately four pieces of chicken. The lemon half remaining should be sliced and placed between the chicken cubes on the wooden skewers.

Air-Fryer Directions

After marinating the chicken, heat the Air Fryer to 400 degrees

After the Air Fryer heats up, spray or brush the tray lightly with olive oil. Place the chicken skewers in one layer. Flip the skewers and cook at 400 degrees for 5 min. Serve with Tzatziki Sauce

Tzatziki Sauce

1/2 cucumber, with the seeds removed and grated
2 scallions, minced
1/2 teaspoon sea Salt
