Some foods are overlooked by the crowd, or are overshadowed in favor of classics. They are out of sight and out of mind, no matter how tasty, versatile or accessible they may be. Occasionally, something will shake us out of our stasis, forcing the question: Why don’t I eat this more often?

Speaking for myself, I’m talking about plantains here. They are sweet and satisfying, but I think of them like tropical potatoes. Anything spuds can do, plantains can do, too. Not to invoke Bubba Gump, but you can boil them, fry them, saute them, bake them, mash them, stew them… You get the picture.

Inspired by my Za’atar Melting Potatoes The Everyday Vegan Cheat Sheet Jerk Melting Plantains They are coated with jerk spice and roasted to a crispy, blackened finish, while maintaining a buttery interior. It is a delicious, juicy result that you would not expect to come from a starchy food. This will hopefully help me and you remember to add plantains to your grocery list more frequently.
