Lemon Curd Desserts
When I had the original idea, I made it using freshly churned ice-cream lemon. Although it was delicious, the ice cream was overly lemony and did not have a strong curd flavor.
Well, I adore lemon curd desserts, so that wasn’t going to work for me. Then I swirled it into some cheesecake ice-cream.
That was delicious as well, but it wasn’t quite what I wanted. The cheesecake flavor was dominant and I wanted the curd in this icecream to take center stage.
I should’ve known that I’d wind my way back to classic vanilla ice cream for this recipe. The base is made up of just five simple ingredients: heavy cream (or milk), sugar, salt and vanilla.
The pure flavors of ice cream allow the subtle brightness from the lemon to shine through exactly as I had imagined. Warm the curd leftovers and drizzle them over each scoop of cold, creamy ice cream. You won’t regret it.
