Masala Tteokbokki

  • 8 oz tteokbokki
  • 3 tbsp neutral oil

  • 1 Yellow onion Thinly sliced
  • 1/4 jalapeno pepper Finely minced

  • 1 tsp kashmiri chili powder
  • 1 tsp gochugaru or use cayenne
  • 1/2 tsp Ground turmeric
  • 1/4 tomato paste Double concentrated

Cashew Cream

  • 1/2 raw cashews Soaked
  • 1/3 Filtered water


  • Cashews can be soaked in boiling water while they are being cooked.
  • Use your hands to gently separate any pieces that are stuck together. Set aside, and soak the tteok while you prepare your base.
  • Oil should be added to a heavy bottomed pot. When oil is hot, add the bay leaf and cumin seed and toast them for one minute or until fragrant. Stir with a spatula. Next add onions and sauté until translucent and tender, about 2-3 minutes. Add jalapeno, garlic and ginger and sauté for another minute.
