Brownie Ice Cream
My dad adored brownies. We often served them as desserts with vanilla ice-cream. He liked them best slightly burned. He would leave any leftover brownies out overnight to dry up, and in the morning he’d dip them in coffee like biscotti.
So, while it was certainly a rarer dessert than my mom’s Jell-O, the combination of brownie and ice cream was one I got to gleefully experience as a young child. It’s a classic pairing, and for good reason.
The combination of vanilla ice-cream and intense chocolate is a perfect match. The textures are a mix of crunchy, chewy and smooth. It is piping hot but also freezing cold when a brownie is served with ice cream. The balance of the dessert is just perfect.
Use any brownies for this ice-cream. Oreo Brownies were my inspiration. But, Dark Chocolate Brownies are great in vanilla ice cream, and these Gluten-Free Double Chocolate Brownies would also work.
