Pickled Carrots add a bright, tangy flavor to any dish. You will be amazed at the difference these carrots make when you serve them on tacos, or in your favorite sandwich. It only takes 15 minutes to make them!

I started gardening several years ago and soon discovered that most of the work is done after the garden has been planted. What can you do with all those zucchinis, tomatoes, carrots, and onions? It’s the perfect problem to have if you ask me! So I’ve come up with a few recipes to make the most out of all of your hard work. Try zucchini bread, homemade marinara and delicious onion rings.

Pickled carrots are a quick pickle.

I can’t say enough about these pickled carrots! It’s a quick and easy way to use carrots you may have in your refrigerator or those that you dug from your garden. To add some spice, I also like to add radish. These carrots taste just as good as refrigerator pickles and are almost as simple to make. This recipe is great because the carrots can be eaten right away. You don’t have to wait longer than it takes them to cool off before digging in.
