It’s fall and I want comfort food. Risotto has always been one of my favorite comfort foods. I’ve made it in so many different ways, from mushroom risotto and vegan broccoli cheese risotto.
It’s the pumpkin risotto that is the ultimate comfort food of fall. This pumpkin risotto is a great alternative to my butternut squash version. The pumpkin risotto has a very different taste and texture from the butternut risotto.
This is also one of the simplest risottos you can make. We’re already prepared for most of the preparation work since we use canned pumpkin puree. It’s also easy to have a few cans of canned pumpkin around for when you crave this dish, which is pretty much all the time. It’s delicious!
