This simple champagne vinegar is my favorite salad dressing. Champagne vinegar has a pleasant tartness without being too acidic. The balance of sweet and savory flavors is created by mustard, shallot minced, and maple sugar. This vinaigrette can be made quickly and is delicious on salads as well as grains bowls and roasted veggies. It’s a staple in my home!
