To make these flavorful vegan hoisin rice noodles, slurpable noodles are stir-fried in veggies and dressed with a savory sauce.

I always have a jar in the refrigerator. It’s a versatile seasoning that adds a lot of flavor to countless dishes. It’s the reason I use it in many of my favorite dishes, such as General Tso’s Tofu or vegan Pho.
Hoisin is the main ingredient in these noodles, and they are full of flavor. This dish is packed with colorful veggies, garlic, ginger, and Chinese 5-spice. It’s super simple to prepare and is incredibly comforting.
This recipe is highly adaptable. Rice noodles can be substituted with ramen or soba. You can also use spaghetti. I chose a colorful array of carrots and broccoli from my crisper when creating the recipe. But you can use anything. Add some protein. Fry up some tofu or Seitan. Play around and have fun with this recipe.
