These street corn tacos are made with fresh sweet corn kernels sautéed with a creamy chili lime sauce and stuffed into warm tortillas with refried beans. The street corn tacos can be made in less than 30 mins!

Since I first made this vegan streetcorn a few year ago, I have been dying to make it into tacos. This vegan street corn recipe has many tasty elements that make it perfect for tacos. Mexican spices, creamy salsa, and juicy bits of summer corn burst into your mouth at every bite.

It was a great taco experience! They’re significantly easier to make than street corn — the filling cooks up in minutes on the stove, so no need to bust out the barbecue grill. This filling is also great with other taco ingredients, such as crisped tortillas and refried bean.


Ingredients You Will Need

  • Vegan mayonnaise. You can find it near the regular mayo in the supermarket. Just Mayo Vegenaise and Hellman’s Vegan may be a few brands you should look for.
  • Lime juice. For the best flavor, use freshly squeezed juice. For the best taste, use freshly squeezed juice (not bottled!)
