I love to make large meatloaves because they leave you with a lot of leftovers. You can use them for a meatloaf sandwhich or other delicious meals. Another dinner could be meatloaf with mashed potatoes, gravy and green beans. There are many options. I freeze half of the meatloaf and divide it into three portions. The meatloaf is ready-to-use without any cooking.
Four pounds of ground turkey or beef
1 large sweet onions finely diced
4 eggs (beaten)
Use 1/3 cup of ketchup
1 1/2 cups beef stock
3 cups Italian-flavored Breadcrumbs
2`3 large baking potatoes cut into eighths
Pre-heat the oven to 350 degrees F.
Spray cooking spray on a large roasting dish. Set aside.
Combine the onions, breadcrumbs and ketchup in a large bowl. Mix until combined.
Add the ground beef. Mix well.
Form the large oval loaf into the baking dish.
Place the potatoes all around the meatloaf.
Roast the chicken in a preheated oven until it reaches 160 degrees F on an instant-read thermometer.
Serve with spinach or another green vegetable.
