Thai curries are available in so many different flavors that I have never been able pick one. Each curry has its own unique flavor and is suited to a particular mood. Yellow curry has a cozy, comforting flavor, while massaman is hot and spicy. Green curry tastes fresh and spicy. SO SPICY!!
When I crave some heat, my favorite Thai dish is vegan red curry. The bright red color of the sauce gives you a good idea of how spicy the dish is.
You should be cautious if ordering traditional red curry at a restaurant. Red curry, and all Thai curries in general, are often made with ingredients that are not vegan. These include shrimp paste and seafood sauce.
