Beef and Barley Sup

Ingredients for homemade beef sticks

  • 4-6 pounds beef  bones
  • Beef seasoning of any kind
  • A sweet onion cut in half
  • Handful celery tops
  • Half a large carrot
  • 1 large bay Leaf
  • Unpeel and half 1 large clove of garlic
  • Half a teaspoon of whole black peppercorns
  • 1 teaspoon of salt

Directions

Heat the oven up to 400 degrees F. Sprinkle the seasoning on the bones. Bake the baking dish for 30 minutes in the oven.

Increase the baking time if you are using uncooked bones. The bones must be nicely browned.

Place the browned ribs in a Dutch Oven. Add the rest of the ingredients and cover everything with water. Bring to a rolling boil, then simmer covered partially for 3-4 hours.

Straining the broth with a colander covered in cheesecloth is a good idea. Some of the broth can be used to make soup. Discard the bones and the vegetables.

  • 1 tablespoon olive oil
  • Chop 2 cups of leeks
  • 2 cups of chopped carrot
  • 2 celery stalks, sliced
  • 1 garlic clove minced
  • 8 cups beef stock
  • Water 2 cups
  • 1 thyme sprig
  • Black pepper, freshly ground: 1/2 teaspoon
  • 1 large bay Leaf
  • 1 cup uncooked Pearl Barley
  • One cup of diced mushrooms
